The hospitality and catering industry is a fast-paced, creative world with a wealth of opportunities on offer. If you want to progress your career in this field in the specialist area of patisserie, this course is for you. You'll be trained by our experienced team of lecturers in our professional standard kitchens, which rival any you'll find in the industry, preparing dishes for paying customers in our student-run restaurant, Enfields. You will develop your technical skills in producing complex pastry products, marzipan pastillage and sugar products, complex bread and dough items, cakes, biscuits, sponges and scones, chocolate products, hot and cold desserts, healthy dishes, sauces coatings and fillings. You will also build your knowledge of essential health and safety information and how to be an effective team member. Throughout the course, you will be assessed by building a portfolio of evidence and observation of practical tasks in the kitchen. On completion of the course, you can progress onto Level 4 or Foundation Degree Hotel and Catering Management courses. Alternatively you could progress into the industry. Pastry chefs are in demand and there are also opportunities for those interested in setting up their own business. Past catering students have enjoyed great success including employment with top North East eateries such as The Black Door, Six, Terry Laybourne's Broad Chare and Cafe 21, The Feathers and Jesmond Dene House. Qualifications needed: You will need to have achieved Level 2 Cookery or have equivalent skills. Required Experience: Experience of working at Level 2 in Professional Cookery.
